Lemon Butter Baked Cod

Ingredients:
-2 lb of cod(or any white fish)
-1/4 cup butter(grass fed)
-2 tbsp lemon juice
-1/4 cup of flour
-Dash(es) of paprika(depending om how flavorful you want it)
-Salt and pepper to taste

Directions:
-Trim/cut filets to your liking
-Melt butter(on stove or micro) and add the lemon juice.
-Mix flour, salt, and pepper
-Dip fish into lemon/butter mix. Getting both sides thoroughly.
-Dip fish into flour mix. Getting both sides thoroughly.
-Place filets on uncoated baking dish. I covered a baking sheet with foil which also worked fine.
-Pour remaining lemon/butter mix over fish filets.
-Add your dash(es) of paprika to entire dish.
-Bake uncovered at 350 fahrenheit for 25-30 minutes until flaking happens.

Girls trip to Paris

HAPPY MONDAY! Finally getting around to share Paris trip #2.

 I waited all my life to go to Paris and now I have been there twice in the past month in a half! SAY WHAT?!

The minute my friend Jayda(from college) and her mom found out they were visiting we immediately started planning our trip to Paris. We decided on a short trip so they could see other parts of Europe, but knew we wanted to cram in as much as possible.

 SO let me be honest, Brynn didn't do so great on the train or being dragged around all day. It had to of made me a better mom. At least I am counting on that anyway. I decided that will be the last time I travel with Brynn alone. Unless I'm forced to of course. None the less we hit a lot of hot spots and even got to see two things that I didn't get to my first time around. I was impressed by how much I remembered and being a haas at the metro system. We had such a good girls trip. I am thankful to have had some much needed girls time. Plus, a first of friends coming to see us in Europe! Yep, all the rest of you I'm calling you out. ;) Get your booties here ASAP.

 Our first meal at Le Deauville on the Champs de Elysee and it was so delicious! Brynn was a huge fan of our waiter too. 
We then headed to the Louvre.

After our Museum wandering we got some late night crepes. Banana and Nutella for me, please!


 We woke up early and headed to see the Eiffel Tower from a different view I had never seen. The view never gets old.

Made the must have bakery stop for some goods.

Brynn wasn't having the cold at this point. So I made a mommy decision and spent some time in the hotel letting her relax. 

Once she was geared up and ready to go Jamie(Jaydas mom) and I headed to the Sacre de Coeur before leaving back to Lux.

 I was absolutely in awe. The inside was even better, but no photography allowed to be taken. 


 The most amazing view of the city even through the fog.

Mom takes Europe

Missing my mom so much today. Well, every day. My moms time here went by insanely fast. We had such a blast taking her around and showing her our lifestyle. We made sure to take her to Cologne, Germany, Trier, Germany and all around Luxembourg. We should have gotten her to Belgium or France with them being so close, but we wanted days to just lay around. Oh and you know we had to indulge in many pastries!

Brynn and my mom picked their relationship up right where it left off. Late night snuggles while my mom sings her favorite worship songs was my favorite to watch. My mom watched Brynn while letting Brad and I have 3 nights in 10 days to ourselves. Thats a miracle in itself! It was such a sad time to drop her off at the airport. Praying the next 3 months fly by to when Brynn and her grams are reunited! I also will be pretty selfish when first getting home in hogging my mom. No shame.

Chicken & Asparagus Pasta

Off topic, but re-did the blog design and I am lovin' it!

I made this tasty meal one night last week. It is decently healthy and easy so I thought I should share it! I of course found it on Pinterest, but tweaked a few things. Especially in the cheese area. I love things cheesy!




Ingredients:
8X8 pan(double everything for 9X13)
1 tablespoon of Olive Oil
1 bushel of asparagus
1 bag of pasta of your liking
2 Chicken breasts
Seasoning that you prefer for your chicken breasts
Salt and pepper to taste
1/4 cup of parmesan
1/3 cup of Mozzarella 

Directions:
- Start boiling your pasta as you would any other time until fully cooked.

- Chop your chicken into small squares and grill it up in the skillet until fully cooked.

- Steam your asparagus and cut in half. 
   *To steam my asparagus I didn't have a steamer set. I got a large pot and placed 3 large size foil balls in the bottom in a triangle. I then placed a heat safe plate on top that fit in the pot. Placing the cut in half asparagus on the plate I then filled the pot with water until at the plate. Boiling the water and covering for 15 to 20 minutes until fully steamed.

-Spray your pan and add in the tablespoon of olive oil.

-Layer your ingredients by asparagus, pasta, and the chicken stirring so that all is covered with the olive oil.

- Sprinkle the parmesan and mozzarella over the top. 

-Place your oven on broil and place it in for 5 minutes until crispy on top.
